Wine-cellar

The wine cellar is  newly built; it is located in front of the farm house, and near by the vineyards.
In here we find wine insulated storage tanks with spiral runner cooling jacket totally covering cylindrical body surface;  allo f this to  guarantee the control of the Temperature  in every single step of  the fermentation; we use barrique for those prodocts that need to be aged or in function of the wine progect that we want to achive .
The vintage effects  radically the thecnology that  we can use, and in function of the climate trend, even the  grapes content could be affected,  and as we know there is a considerable  connection between grape composition and wine.
Oenologists  have to work in a way to  guarantee the preservation of the best and noble  wine qualities.
Grapes are picked manually, to preserve the skin’s integrity,  to avoid  undesired processes of oxidizing.
We always work in order to select the grapes before we start any vinification process, and we daily check the trend of velues related to vinifications process.
We mainly grow Freisa which found in this territory, its ideal habitat;  we produce  four  different kind of wine starting from this grape : rosè, dry, sparkling, and aged in barrique.
The other variety that we produce are Barbera, Merlot, Chardonnay, Bussanello, Syrah, and Bonarda.
